Freezer Temperature Explained: -8°F vs -13°F (and Why It Matters)
Two freezers can both claim to be "commercial," yet hold very different temperatures — one at -8°F, another at -13°F. That five-degree gap isn't trivial; it's the difference between ice cream you can scoop and protein you can store for months. Here's what each range actually means.
Start with the food-safety floor
The FDA Food Code requires frozen food to be kept at 0°F or below. Everything colder than that is about quality and convenience, not just safety — how long food stays good, how easy it is to serve, and how much margin you have when a busy door opens constantly.
-8°F to 0°F: the display and serving range
This is the range for glass-door freezers, and it's tuned for merchandising:
- Ice cream and frozen desserts — scoops best at 0°F to -5°F, so this range keeps it serve-ready instead of rock-hard.
- Frozen grab-and-go — customers open the door often, and -8°F to 0°F keeps product safely frozen through it.
- Anything a customer can see and reach — because the point is display, not deep storage.
KOOLOTS glass-door freezers (KF200G, KF400G, KF600G) hold exactly this band.
-13°F to 0°F: the deep-storage range
This is the range for solid-door freezers, and it's tuned for back-of-house storage:
- Deep-frozen protein and long-term stock — the colder floor slows quality loss and buys you weeks of margin.
- A busy kitchen door — the extra cold headroom absorbs the warm air every time staff opens it.
- Bulk ingredients — frozen vegetables, dough, and prep you won't touch for a while.
KOOLOTS solid-door freezers (KF400, KF600, and the -SS stainless variants) pull this low.
Why solid doors reach colder than glass
It's insulation, not a better compressor. A solid door loses far less cold each time the unit sits idle, so the compressor can push the cabinet to a lower floor. Glass doors trade a few degrees of floor for the visibility that drives impulse sales. That's the whole trade-off — see glass door vs. solid door.
Your temperature checklist
- ✓ Ice cream / display / grab-and-go → -8°F to 0°F, glass door
- ✓ Protein / long-term / back-of-house → -13°F, solid door
- ✓ Keep the unit at 0°F or below for food safety
