What Size Commercial Refrigerator Do You Need? (13 vs. 20 vs. 21 cu.ft)
Buy a refrigerator that's too small and you'll be restocking it twice a shift — or worse, running out during the rush. Buy one too big and you're paying to cool empty air. Sizing is about matching cubic feet to what you actually store and how fast it turns. Here's how to land in the middle.
Cubic feet ≠ usable shelf space
Capacity is stated in cubic feet, but the number that matters is usable shelf space — how many pans, cases, or gallons actually fit. A 20 cu.ft unit with poorly laid-out shelving can hold less usable stock than a 13 cu.ft unit with smart shelves. Look at shelf count, spacing, and whether shelves adjust, not just the headline number.
13 cu.ft: the compact workhorse
A 13 cu.ft reach-in fits a small café, food truck, or prep kitchen. It holds a modest run of daily ingredients — a couple of milk crates, produce for the day, and a shelf of prep. KOOLOTS KR400 and the solid-door KR models land here, in a 24-inch footprint that slips into tight kitchens.
20–21 cu.ft: the restaurant standard
A 20–21 cu.ft unit is the default for a busy restaurant — enough to hold a full day of protein, dairy, and produce with room to rotate stock (newer goes in back). In a 31-inch width, KOOLOTS offers the KR600 line. Choose this when you restock once or twice a day, not hourly.
Match capacity to turnover, not total menu
The classic mistake is sizing to the size of your menu instead of how fast stock turns. A café with 30 menu items but daily deliveries needs less cold storage than a pub with 12 items that gets one delivery a week. Ask yourself:
- How often do I receive deliveries? Less frequent = more storage needed.
- What's my busiest shift? Size for the peak, not the average.
- Do I hold reserves, or buy as I go? Holding reserves needs buffer space.
Freezer vs. refrigerator sizing
The same logic applies to freezers, where KOOLOTS spans 4.0 to 21.4 cu.ft. A café freezing ice cream needs a display freezer (KF200G), while a restaurant freezing bulk protein needs the KF600. (Freezer temperature and door guide: reach-in freezer buying guide.)
Your sizing checklist
- ✓ Count your busiest-day stock and add a rotation buffer
- ✓ Check usable shelf space, not just cubic feet
- ✓ Match delivery frequency to capacity
- ✓ Leave room for airflow around the unit
