Ice Cream Shop Freezers: The Right Temperature & Display for Scooping
Ice cream is one of the few foods where the wrong temperature is a sales problem, not just a storage problem. Scoop it too cold and it's rock-hard; too warm and it's soup. And because it's an impulse buy, the freezer itself has to sell. Here's how to get both right.
The scooping temperature sweet spot
Ice cream scoops best at 0°F to -5°F — cold enough to stay firm, warm enough to cut cleanly into a scoop. That's why KOOLOTS glass-door freezers hold -8°F to 0°F: they sit right in the display-and-scoop range. Going much colder (say, a solid-door freezer's -13°F) makes product hard to serve straight from the case — fine for backstock, wrong for the display.
(The full breakdown: freezer temperature: -8°F vs -13°F.)
Glass door: let the product sell
Customers buy ice cream with their eyes. A full-view glass door with bright interior LED lighting turns your case into a billboard — the colors and tubs do the selling while you're busy scooping. For an ice cream counter, the glass-door KOOLOTS freezers are the right tool:
- KF200G — a compact 24-inch showcase for a counter or kiosk.
- KF400G and KF600G — larger displays for a busy scoop shop.
Display + backstock: the two-freezer setup
Serious scoop shops run two freezers: a glass-door display up front (cold, visible, frequently opened) and a solid-door freezer in back for the reserves you pull from. The backstock unit can go colder (KF400 holds -13°F) and only opens occasionally, so it's more efficient. This keeps the display cold by not making it carry the whole inventory.
Defrost on a schedule — ice cream hates frost
KOOLOTS freezers use direct cooling, which means you defrost manually. For an ice cream shop that's actually a feature: no automatic melt cycle means no repeated partial-thawing that turns the surface icy and grainy. Defrost on a regular schedule (ideally overnight, when the case can be emptied), and you'll keep product texture consistent. (More on defrost: automatic vs. manual defrost.)
