Commercial Ice Machine Buying Guide (2026)

An ice machine is the one piece of restaurant equipment nobody notices — until it can't keep up. When the bin runs dry on a Friday night, service slows to a crawl: the bar can't shake cocktails, the soda fountain runs warm, and a cook is sent next door with a bucket. The machine didn't fail. It was simply sized wrong from day one.

Most operators buy an ice machine the way they'd buy a freezer: "the big one should cover us." But ice is a flow, not a stockpile. The machine produces a fixed number of pounds every 24 hours, and your busiest four hours consume most of it. This guide walks through how to size an ice machine by your business type and your busiest day's customer count — plus ice type, certification, installation, and total cost — so the bin never runs dry again.

First: understand how an ice machine is rated

Every ice machine carries a daily production number — 350 lbs, 450 lbs, 540 lbs — and that number is more fragile than it looks. Two things decide what you actually get:

  • The rating conditions. Industry ratings assume 70°F air and 50°F incoming water (AHRI standard conditions). Put the same machine in a 90°F kitchen on a summer night — which is exactly when you need the most ice — and real production drops 10–15%. If you size with no margin, you will run dry precisely on the days that matter.
  • The production vs. peak problem. The machine spreads its output across 24 hours, but your demand arrives in a four-hour spike. A restaurant that "only" uses 200 lbs a day can still run dry at 8 pm if it burned 120 lbs between 5 and 8 pm. The storage bin is what carries you through that spike — overnight production fills it, and the bin drains during service while the machine refills behind it.

So sizing has two numbers: daily production (lbs/24H, matched to your busiest day) and bin capacity (matched to your peak service window). Both are covered below.

Step 1 — Estimate your daily ice demand

Start with the number that drives everything: how many customers do you serve on your busiest day, and how much ice does each one use? Industry rule-of-thumb ranges by business type:

These are starting points, not gospel. If your signature item is iced tea on a patio in July, you're at the top of the range — or beyond it. Watch your own numbers for two busy weeks: track how many pounds you buy or produce, and you'll know exactly where you stand.

Step 2 — Add the margin, then size the bin

Add 25–30% for the day that matters

Take your busiest-day estimate and add a 25–30% safety margin. That margin covers the hot-kitchen derate (production drops in heat, remember), a busier-than-planned season, and menu growth. Buying exactly what you use today is how machines "mysteriously" run dry every August.

Two worked examples:

  • A fast-casual spot doing 400 customers a day with a soda fountain: 400 × 0.5 lb = 200 lbs, plus 30% ≈ 260 lbs/day. A 350-lb machine covers it with real headroom.
  • An 80-seat full-service restaurant doing 160 covers a day, no bar: 160 × 1.25 lb = 200 lbs, plus 30% ≈ 260 lbs/day. Same answer — a 350-lb machine. Add an active cocktail bar and the number climbs toward 400 lbs.

Size the bin to your peak, not your day

The bin is the bridge between slow production and fast service. A good test: can the bin hold roughly your peak 4–6 hour draw? If your dinner service burns 150 lbs between 5 pm and 9 pm, a 220-lb bin covers it with room to spare, refilling from overnight production. If the math shows your peak draw exceeds the bin, step up — or add a second station (more on that below).

Step 3 — Match the machine to your business type

Cafés and coffee shops

Iced coffee, cold brew, and smoothies drink a surprising amount of ice — and the customers who order them chew it. That's why coffee shops are the natural home of nugget ice: soft, chewable, slow-melting, and it absorbs flavor instead of watering a $7 cold brew down. Quick service and fast casual

Fountain drinks are your ice load, and it's steady all day rather than one spike. Full-service restaurants

One machine serves the whole house: glass ice at the expo line, fountain ice up front, and — if you pour drinks — bar ice in the back. Figure 1–1.5 lb per cover. Most 80–120 seat dining rooms land between 250 and 400 lbs on a busy day: the ICE-450P (450 lbs/24H, 220-lb bin) carries that load in summer, while the ICE-350P covers lighter dining rooms. Bars, cocktail lounges, and nightclubs

Bars are the heaviest ice users per customer in the business: every cocktail consumes a pound or more across the shaker, the glass, and the garnish tray, so figure 2–3 lb per customer. A busy cocktail bar pouring 300–400 drinks on a Saturday night can burn 300–500 lbs — that's a full day's production in six hours. Hotels, motels, and event venues

Hotels serve three masters at once: guest ice machines, breakfast and banquet service, and the bar. Figure 3–5 lb per occupied room plus your F&B volume. Catering and banquet halls

Event kitchens don't have slow days — they have no days and then a 300-guest wedding. Size for the event, not the average: 1.5–2 lb per guest puts a 200-guest event at 300–400 lbs. The ICE-400B's deep bin suits buffet lines, and the ICE-M540F's 12-minute cycle suits back-to-back event days.

Food trucks and event bars

Space and plumbing are the constraints, not volume. A countertop unit that runs on tap or bottled water — like the SKF-S30JW — drops into a truck with no permanent line, and touchless dispensing keeps a service window moving.

Step 4 — Choose the ice type

The ice type is a menu decision, not an afterthought:

  • Full cube — dense, slow-melting, clear in the glass. The right answer for cocktails, spirits, and any drink where dilution matters. All ICECASA modular and self-contained machines (ICE-350P, ICE-400B, ICE-450P, ICE-M540F) produce 0.9" full cubes.
  • Nugget ice — soft, chewable, and the ice customers order by name. Slower to melt into sodas and iced coffee, and it doesn't crack a filling. The SKF-S30JW is ICECASA's nugget unit, built for cafés, bars, and self-serve stations.
  • Half cube / dice — faster chilling and faster melting, popular at soda fountains where drinks are consumed in minutes. You don't need a separate machine for it: the ICE-350P and ICE-450P switch between full cube and half cube / dice by adjusting the ice density setting — one machine covers the fountain and the bar.

Step 5 — Check certification and construction

An ice machine touches food directly, so it falls under the same inspection rules as the rest of the kitchen:

  • ETL certification — the electrical-safety mark health inspectors recognize, equivalent in standing to UL.   • Stainless steel exterior, food-grade interior. An ice machine lives in humidity and gets cleaned with chemicals — plastic cabinets and painted steel don't survive that for long. Look for stainless outside and food-grade polyethylene inside, as on every ICECASA model.

Step 6 — Plan the installation before you order

Ice machines are plumbing fixtures as much as appliances. Four checks save most installation headaches:

  • Water supply. A cold potable line within reach of the machine. Water quality matters more than any other factor in ice machine life — hard or unfiltered water scales the evaporator and kills production.   • Drain. Every ice machine needs a drain nearby for melt water and cleaning cycles. A floor drain below the unit is ideal; otherwise budget for a condensate pump.

Step 7 — Count the real cost: price + water + maintenance

Sticker price is only the first number. The real cost of an ice machine has three parts:

  • Purchase price. A certified commercial ice machine realistically runs $1,150–$3,250 depending on production and bin (see the lineup below).
  • Water and scale. Every pound of ice is roughly a pound of water, plus melt and cleaning water. Unfiltered hard water doesn't just cost water — it shortens machine life. A filter is the cheapest insurance you'll ever buy for an ice machine.
