Commercial Refrigerator Temperature Requirements (FDA)
Temperature is the single most important spec on a commercial refrigerator — more than cubic feet, more than shelves, more than price. If the box can't hold the right temperature through a busy service, everything in it is at risk. This guide covers the exact numbers the FDA Food Code requires, and how to make sure your unit actually meets them.
The numbers you need to know
The FDA Food Code sets three thresholds every food-service operation must hold:
- Cold food: hold at 41°F (5°C) or below
- Frozen food: hold at 0°F (-18°C) or below
- Hot food: hold at 135°F (57°C) or above
The gap between 41°F and 135°F is called the temperature danger zone — the range where bacteria multiply fastest. Your refrigerator's job is to keep food out of that zone, continuously, not just when it's first loaded.
Why 41°F, not "cold enough"?
"It feels cold" doesn't pass an inspection, and it doesn't protect food. Pathogens like Listeria and Salmonella can still grow slowly in the 41°F–50°F range. That's why the Food Code draws the line at 41°F — and why many operators set their units to 38°F–40°F for a safety margin against repeated door openings.
A unit that can only reach 45°F on a warm afternoon is not doing its job. Look for a refrigerator whose compressor and airflow are rated for commercial duty — meaning it recovers to temperature quickly after the door opens.
Refrigerator vs. freezer: two different machines
A common mistake is treating a refrigerator and a freezer as interchangeable. They are not:
- A refrigerator holds product just above freezing — typically 33°F–41°F.
- A freezer must pull product to 0°F or below, which is a much harder job requiring a different compressor and insulation spec.
Buying a refrigerator to "kind of freeze" or a freezer to "kind of chill" always ends in spoiled product or a failed inspection. Match the machine to the job. (See our commercial refrigerator buying guide for the full type breakdown.)
How to monitor it (and pass inspection)
- Use a real thermometer. Don't trust the unit's dial. Place a calibrated thermometer in the warmest spot — usually near the door — and log it daily.
- Log it. Health inspectors want to see a temperature log, not a promise. A one-minute check each shift creates the record.
- Don't overload. Air needs to circulate. A packed-to-the-gills unit has warm pockets even when the sensor reads 40°F.
- Check recovery. Open the door, note the reading, then check how fast it returns. Slow recovery is the first sign of a dying compressor.
What happens when temperature fails
When a refrigerator drifts above 41°F for more than a couple of hours, you're in discard territory — and the cost of one thrown-away case of meat or dairy often exceeds the price difference between a cheap unit and a proper commercial one. Temperature failures are also the #1 trigger for critical health-code violations.
